Ingredients:

  • 1 cup Tigernut Flour
  • 1 tablespoon Psyllium Husk
  • 1 Β½ cups Water (adjust as needed)
  • Pinch of Salt (optional)

Instructions:

  1. Prepare the Mixture:

    • In a mixing bowl, combine the tigernut flour and psyllium husk. Mix well to ensure even distribution.
  2. Add Water:

    • Gradually add water to the dry ingredients, stirring continuously to avoid lumps. You may need to adjust the water amount depending on the consistency you prefer.
  3. Cook the Fufu:

    • Transfer the mixture to a non-stick pot or pan over medium heat.
    • Cook, stirring constantly, until the mixture begins to thicken. This should take about 5-7 minutes.
    • Continue to cook and stir until the fufu reaches a smooth, stretchy consistency. If it becomes too thick, add a little more water.
  4. Adjust Seasoning:

    • Add a pinch of salt if desired, and mix well.
  5. Serve:

    • Once the fufu is smooth and pliable, remove it from the heat and let it cool slightly before serving.

Serving Suggestions:

  • Egusi Soup: Enjoy your tigernut flour fufu with a rich, hearty egusi soup. The creamy texture of the fufu complements the robust flavors of the soup beautifully.

  • Efo (Spinach Stew): Pair the fufu with a flavorful efo stew, made with tender spinach and a blend of spices. The combination is both nourishing and delicious.
