How to cook Ewedu soup with Ewedu dried powder leaves

It's convenient, easy to use, and still retains all the nutrients and flavors of the fresh leaves. Below is a simple recipe for making Ewedu soup with Ewedu powder.

Ingredients:

  • 1 cup Ewedu powder
  • 2 cups water or chicken broth
  • Salt to taste
  • Locust beans (optional)
  • crayfish (optional)

Instructions:

Mix ewedu with water in a bowl and set aside.

Start heating the water in your pot on medium heat. Add the mixture of ewedu and water to the pot, stir, and cover for about 5 minutes. It should start boiling by this time.

Open after 5 minutes (depending on how long it takes for you to wash other ingredients), then use a broom-like hand whisk or any blender of your choice to mash or blend the Ewedu until it turns slimy. Depending on how slimy you want it, you can increase or decrease its thickness by adding more water to the mixture.

Add salt to taste and locust beans/crayfish (optional) for added flavor.

Stir, and let it simmer for 2-3 minutes.

Your delicious Ewedu soup is now ready to be served with any swallow of your choice. Ewedu soup is not only tasty but also highly nutritious, containing vitamins A and C, as well as iron and calcium.
